Because of the way the XHP Broiler atomizes fat, natural oils are returned to the food, providing continual self-basting. Water vapor that’s naturally released from the fat and oils during cooking is also absorbed back into the food giving you 50% less shrinkage than a standard charbroiler. Easy to Clean.
With an XHP Broiler, the fat is atomized on ceramic base plates. This feature makes cleaning amazingly easy. When the unit is has cooled, simply vacuum out the ash that’s left. There is no grease tray to clean so there is no risk of grease getting into your drains or onto other areas of your kitchen. And, the XHP Broiler reduces the amount of grease that passes through the ventilation system, so they require less cleaning too. Save time and money while being environmentally responsible.
Safe & Simple to Operate.
The XHP Broiler is a safe unit to operate. Just turn the burner on with a simple flick of a switch. When the grill reaches the desired temperature, reduce the gas and start cooking. Clever air-cooled panels ensure the side panels remain cool to touch when in use. XHP offers a constant restrained non-flame-based heat which helps reduce flare-ups and comes with flame-failure protection so if no flame is detected, the gas is automatically shut off. Steel guards protect knobs from being bumped by carts in a busy kitchen.
Standard Features & Options.
Performance Burners.
Energy-efficient gas burners with cast-iron caps, rated at 27,000 BTU’s each, surrounded by a ceramic bed that heats up to 923ºF or 500°C. Each burner is independently controlled with an on/off gas power switch and knob to adjust the gas flow and flame height.
Heavy-Duty Construction.
Stainless steel construction on all outer panels and burner box. Includes a 3-sided stainless steel splatter guard to help keep surroundings cleaner. Heavy-duty, 6" sectioned cast-iron grates are easy to remove for cleaning and seasoning. Zero clearance is required allowing the unit to be flush to the wall.
Cleaning Kit Included.
A 2-in-1 grate cleaning brush/scraper and ignitor cleaning roll are provided with the unit. Use the brush/grate scraper to remove residue when the grates are hot. Once the unit is cooled and the ash has been vacuumed on the ceramic bed, use the abrasive paper roll to lightly sand the ignitor to keep grease from impeding the spark. Frequent cleaning will extend the longevity of the unit.
Optional Slow Cook Shelf.
As food is nearing completion, use the optional slow cook shelf to complete the cooking. It prevents drip contamination from raw or undercooked food onto food that is cooking below.
Optional Equipment Stand.
The XHP Broiler is designed to install it directly on a counter or a refrigerated/freezer base. An optional stainless steel equipment stand, with or without casters, is available for versatility and mobility.
